Cabbage Salad with Peanuts
½ C Unadulterated peanut butter (peanuts and a little salt)
½ C Hot water
¼ C Cider vinegar
¼ C Rice vinegar
3 Tbs Brown sugar
1 ½ tsp Salt
1 Tbs Soy sauce
1 tsp Sesame oil
7-8 C Shredded green cabbage (1 small head)
Crushed red pepper to taste
In a large bowl, whisk together the peanut butter and hot water until they form a uniform mixture.
Mix in the vinegars, salt, soy souce, and sesame oil.
Add the cabbage in 2-cup increments mixing well after each addition. Add red pepper to taste.
Cover the bowl tightly and refrigerate for at least 4 hours but preferable 12-24 hours, stirring it every hour or two.
